Full OS Backup

I connected my Samsung S 8 Plus to an external drive and noticed two folders: Card and Phone. Can I just copy them to the external HD and restore them from there when needed? This seems to be a simple way to get everything. With photos, videos, etc., no problem but, system files could be another story?
If this works then, who needs all these backup Apps!
