Disable google without it affecting my new phone

I want to trade in my old Samsung S6 Edge + in to my old network however I have been told that the mobile is locked to my Google account & it cannot be removed. My question is if I remove the Google account from the S6+ will it affect the Google account on my new device? Both mobiles new & old have the same phone number?
